Need a super refreshing drink to beat the summer heat? This cucumber water recipe, courtesy of Chef NTI, is the perfect thirst-buster, we definitely recommend having this poolside with your friends. Serves: 12
1kg cucumbers, peeled and seeds removed
6 tbsp elderflower cordial syrup (optional)
Mint sprigs, for serving
1. Blend the cucumber with the water.
2. Strain through a fine sieve.
4. Add flavoured cordial syrup, if you like.
5. Serve cold with ice and a sprig of mint.
Pro-tip: If you want to have a darker colour, blend with the skins.
