Pumpkin seeds are packed with, essential fats and fiber to nourish your body.

They are a nutritional powerhouse containing vital minerals (especially zinc and magnesium), B vitamins and vitamin E.

These powerful seeds contain omega-3 and omega-6 fatty acids, antioxidants, and fiber. This combination has benefits for both the heart and liver.

Pumpkin seeds are truly a gift from nature. They taste great and are a good source of protein.


  • 1/2 cup toasted Pumpkin seeds
  • 2 tbsp apple cider vinegar 1 clove minced raw Garlic or 1 heaped tsp. roasted garlic paste
  • 1/2 tsp. Honey (preferable raw/creamed)
  • Handful of fresh herbs (Coriander or Basil)
  • 1 tsp. mustard
  • 2 tbsp Avocado/olive  oil
  • 1/2 tsp. black pepper
  • 1/2 tsp. salt


Dry-toast the pumpkin seeds in a hot pan, tossing until charred (with a lid on, they pop) and then let them cool.

Next, whizz all the above ingredients in your Nutribullet until smooth, then taste and adjust the flavours to your liking.

This dressing stores well in an air-tight sterilized glass jar in the fridge for  2 weeks, but usually mine is finished before then as it goes well with eggs, on salads, as a drizzle in wraps and also on meat /burgers etc.
