EAT GREEK MOUSSAKA

BEEF MINCE or LAMB MINCE

Ingredients:

  • 1kg           Beef Mince
  • 2                Cinnamon Sticks
  • 3                Bay Leaves
  • 1                Large Onion – chopped
  • ½ cup     Worstershire Sauce
  • ½ tsp      Coarse Pepper
  • 1 tsp        Salt
  • 3 tbsp    Tomato Paste

Method:

  • Place the mince, bay leaves and cinnamon sticks in a large pot.  Start cooking on a high heat then reduce the heat halfway through the process.  Continuously stir the mince, break any lumps and reduce all the water.  Add the chopped onion and continue cooking till the onion is soft. 
  • In a separate container mix the Worstershire Sauce, pepper, salt & tomato paste.  Mix well. 
  • Once the onion is soft and the water has gone, add the mixture to the mince and continue cooking for another 10 minutes while stirring. Remove bay leaves and cinnamon sticks.
  • Set aside.

BECHAMEL SAUCE

Ingredients:

  • 500g   Margarine
  • 1cup     Flour
  • 1½litre   Milk
  • 1½tsp     Salt
  • ½ tsp      pepper
  • 3             Eggs (optional)

Method:

Melt the margarine in a pot.  Once melted add the flour and using a whisk mix it with the margarine.  Cook for 2-3 minutes, whisk mixture regularly to avoid it burning.  Reduce heat and continue to whisk while you slowly add in the milk.  Simmer for 8-10 minutes stirring until it has thickened considerably. Remove from heat then whisk in the salt & pepper.  Let the white sauce cool first before you add the eggs.

BRINJALS

Ingredients:

  • 1.2kg       Brinjals
  • 2 tsp       Salt
  • 1/3 cup   Cooking Oil
  • Tinfoil

Method:

Wash the brinjals no need to peel them totally just top and tail them and peel about 4 strips of the skin around the brinjal ,slice them in 1cm thick rounds.  Sprinkle a thin layer of salt on the bottom of a roasting pan and place the sliced brinjal on top.  Sprinkle more salt on top.  Leave for 5 min then wash them with cold water. Drain and place them back in the roasting pan.  Drizzle some the oil over them and cover with foil.  Bake in the oven on 160 degrees for 15 minutes until soft.

  • Beef Mince
  • Bechamel Sauce
  • Brinjals
  • Grated Cheddar Cheese
  • Nutmeg
  • In an oven dish approx. 20cm / 30cm you will start to add in the layers.  First start with a layer of Bechamel sauce then add a layer of the brinjals and then ½ of the mince. Next add a layer of brinjal and the rest of the mince finishing off with the last of the bechamel sauce.  Now add a generous layer of cheese to cover the whole dish.  On top of that sprinkle some nutmeg.
  • Bake in the oven for 20 minutes on 180

Vegetable Moussaka

Ingredients:

  • 400g  Mixed vegetables grilled – carrots, butternut, peppers, baby marrows
  • 150g                          Tin Chickpeas or cooked lentils
  • 300g bottle         Tomato Pasta Sauce (ready to use)

Method:

Layer the dish using the same method as above, but instead of the mince, replace it with the veg.  You can also make a white sauce without the eggs.
