#WELLNESSWEDNESDAY WITH LIVIYA – VEGAN STRAWBERRY SMOOTHIE

We absolutely love using powerful nutrient extractors such as the Nutribullet as they are specifically engineered to break down the cell walls of food to create the most nutrient-dense smoothies possible. With extraction you get the health benefits of eating the whole raw fruit or vegetable. You get the fibre and nutritional content of the skins too (so be sure to wash all fruit and veg before liquidising). You can even liquidise nuts and seeds.

Warning – Do not add the seeds or pits of apples, cherries, plums, peaches or apricots to your smoothies as they contain cyanide which is a form of poison.

Smoothies are a great way to increase your intake of vitamins, minerals and fibre – particularly if you struggle to eat your daily quota of vegetables and fruit. Smoothies are fabulous for breakfast or as a snack during the day. Try to avoid smoothies that contain unhealthy ingredients (like ice-cream) and opt for vegetable ones if you can.

Today’s recipe is a delicious dairy-free smoothie which is brilliant for breakfast. It contains Flaxseeds (also known as linseeds) which are teensy tiny nutritional powerhouses and one of the cheapest superfoods available. They’re absolutely packed with fibre, omega-3 fatty acids, B vitamins, antioxidants, and cancer-fighting lignans. There is plenty of vitamin C as well as other vitamins in this smoothie thanks to the strawberries, orange and banana. And the almonds are high in protein, fibre, good fats and other minerals.

Vegan Strawberry Smoothie (serves 1)

Cost of ingredients in July 2020: Approximately R24 for a tall glass

Ingredients

  • 8 raw almonds
  • ¼ cup of water
  • 1 frozen banana (peel & cut a ripe banana into chunks before freezing)
  • 1 cup strawberries (hulled)
  • 1 tablespoon flaxseeds
  • 1 orange (peeled & cut into pieces)

Method

  • Pour everything into a Nutribullet and blitz. Enjoy straight away.
