GRILLED PEPPERS IN TOMATO SAUCE

  • 500G    ASSOSRTED PEPPERS (REMOVE SEEDS AND CUT INTO THICK STRIPS ABOUT 1 ½ CM WIDE)
  • 250G    READY MADE PASTA TOMATO SAUCE
  • 125ML  WATER
  • 50ML    SPIRIT VINEGAR
  • 1 ½ TSP CRUSHED GARLIC
  • 1 TSP    SALT
  • ½ TSP   PEPPER
  • 40ML    OIL FOR GRILLING
  1. IN A SAUCE PAN SAUTE THE STRIPS OF PEPPERS IN OIL FOR ABOUT 2 MINUTES ON EACH SIDE.
  2. ADD GARLIC TO PAN AND ALLOW TO COOK FOR ANOTHER 2 MINUTES WATCHING CAREFULLY THAT IT DOES NOT BURN.
  3. ADD THE TOMATO SAUCE, WATER AND SPIRIT VINEGAR AND ALLOW TO COOK FOR ABOUT 5 MINUTES.
  4. PEPPERS SHOULD BE TENDER AT THIS STAGE AND THE DISH IS READY TO SERVE.
  5. SERVE HOT OVER PASTA SPRINKED WITH FETA AND CHOPPED PARSLEY OR ROOM TEMPERATURE WITH A CRISP BAGETTE.
